Ten days after their initial E. coli O157:H7 induced beef recall, JBS Swift releases an expanded retail distribution list, which has increased from 18 to 74 pages since yesterday’s last addition. Timing is everything with a Class I Recall: the time that passes between the sale of E. coli O157:H7 tainted beef and the release of information nailing down the whereabouts of that beef is a deciding factor in the number of people whose lives may be adversely affected by E. coli infection and hemolytic uremic syndrome (HUS). The slow pace of JBS Swift Beef has been a great example of how not to handle the aftermath of a foodborne pathogen outbreak.
